Seafood Linguini with Sauted Vegetables
Ingredients
- 1 bag Seafood Mix*
- 1 box Linguini
- 2 Teaspoons Olive Oil
- 4 pieces Green Onion, Chopped
- 1-2 cloves Garlic, Minced
- 2 - 3 teaspoons Tomatoe paste
- 2/3 cups Heavy Cream
- 1/2 cup Broccoli, Chopped
- 1/2 cup Carrots, Finely chopped
Directions
Cook pasta in boiling salted water until al dente. Drain
Heat olive oil in a frying pan. Add green onions, garlic, broccoli, carrot and seafood mix. Cook, stirring for 2 minutes. Add cream and tomato paste stir into mixture and bring to a boil. Simmer for 2-4 minutes until thickened. Add pasta and toss to combine. Season with salt and pepper according to taste. Garnish with reserved green onions.
Notes
Serve with fresh grated parmesan cheese and crusty bread. You can add any other vegetables to this dish. Allow appropriate sauté time for each.
