Quail

These little birds have a lot of flavor for their size and suit both quick or slow cooking. They are oven ready and prepared on the bone. One quail would make a generous starter or light supper for one person; serve at least two per person for a generous main course. Quail are fairly lean and good for roasting, grilling and casseroles, they also make great curries.
